Wheat Germ substitute for granola?
I got some buckwheat flakes from glutino yesterday and made 1/6 of the recipie below using the buckwheat flakes for the rolled oats and leaving out the wheat germ. Any rice and corn free ideas for something to use instead? It made a wonderful breakfast this morning. I am going to buy a flaker so I can afford buckwheat flakes. I made some cereal and it was okay but not great. When I get a flaker I think I will try flaking kasha (roasted buckwheat) also. This recipie was posted on the low fat recipies mailing list at tropica. HONEY MOLASSES GRANOLA Makes 7 cups. This granola is delicious served with a little skim milk and some sliced bananas. 3 cups rolled oats 1 cup wheat germ 1 cup shredded coconut 1 cup chopped walnuts 2 tablespoons sesame seeds 1/2 cup honey 3 tablespoons molasses 1 cup raisins Preheat oven to 300 degrees. Combine all ingredients except raisins in 14-inch by 10-inch roasting pan; mix well. Bake 40 minutes, until golden brown, stirring several times. Remove from oven; stir in raisins. Store cooled granola in an airtight container. Per 1/3 cup: 172 calories, 6 grams fat, 0 milligrams cholesterol, 26 grams carbohydrates, 3 grams fiber, 5 grams protein, 4 milligrams sodium. --by Tiffany Taylor
