topping for baked potato/rice

We love rice and potatoes with a dressing of olive oil, lemon juice, and salt. Sometimes we eat rice with a Hawaiian-ish topping of crushed pineapple with some of its own juice, mandarin orange slices, pepper chunks, and honey all simmered together in a pan before pouring over rice. If your son can tolerate eggs, an egg-lemon sauce made from eggs, lemon juice, chicken broth, olive oil, and salt and pepper is not only good but adds protein. The creamy texture is reminiscent of cheese sauce. HTH! Joyfully, Sue C.
