Themestream recipes

Brenda-Lee, I was running through my personal recipe archives last night and came across a bunch of posts from you and recipes on Themestream..... Since Themestream is unfortunately dead...I wanted to know if these works of art are available anywhere else?????? Thanks again! Andrea

    as yellow squash. Would love to puree and freeze for future baking. Any ideas???? 1. Take zuccinni squash and process it up with pizza and spaghetti sauce. 2. Cut them up into fingers, dip them in batter and deep fry. 3. Cut them into fingers, cut a small wedge across the whole length and fill it with nut butter - like you would do with celery. If your child can tollerate raisins you can sprinkle raisins on top of the nut butter and call them Ants on a Log. My kids LOVE that so we do it with as many types of veggies as possible. Because some kids are turned off by certain colors and because of the salicilyte and pesticide(you said it was in your backyard so you may be pesticide free) issue you may want to peel the squash before using it. This is a good way to sneak it into those who refuse all vegetables, and they contain potassium, niacin and vitamins a and c. My book (Special Diets for Special Kids) has a recipe for zucchini bread (really almost a cake) that is good. Here's another idea--grind up the yellow squash and mix in an egg (if tolerated). Then add some finely ground bread or cracker crumbs (glutino makes an awesome breadcrumb or use Miss Roben's or grind your own Hol Grain crackers.) Mix and form into patties and fry in oil. These are delicious "latkes" (potato pancakes). This works esp well with spaghetti squash. LL

    That sounded like a good idea of try with the spaghetti squash I had cooked in the frig but I did it just a bit different. I took an egg, some moderate salsa and some squash and mixed them up and dumped into a 5 inch skillet. When it was brown on one side I flipped it. Evan ate two of them with catsup. I think he might have ate more if I had fixed another one. He finally let me have one. The rest of the family does not like new foods but this is something Evan and I will like. Betty
