The Best Chocolate Chip Cookies, using egg replacers
I use the chocolate chip recipe in the Special Diets for Special Kids book, it is great, we recently found out we need to go egg free. I have made these cookies with Enger Egg Replacer and they still taste great and are soft but more crumbie, fall apart easier. Any suggestions. Julie, mom to Kristen 7 yo Kaukauna, WI
Hi Julie, I make the chocolate chip cookie recipe using flax seeds to replace the egg. For every egg I use 1 T. flax seed and 1/3 C. water. I usually grind the seeds up, but it is o.k. if you do not. Put the water and seed in a sauce pan and heat on a low setting. It is supposed to come to a boil then reduce heat and simmer for 5 min. I just let it slowly heat up and then do an additional 5 min.; otherwise, it gets to thick. They are very moist and not crumbly. By the way, where is Kaukauna? great and are soft but more crumbly, fall apart easier-Julie A trick for less crumbly cookies, cakes and muffins is to substitute powdered sugar for any regular (granular) sugar. 2 cups powdered = 1 cup granulated.
Would also putting the 1 cup granulated sugar in the blender dry also help. Like making it powdered and saving the cost of using all that powdered sugar? Betty in Central California
