I know that some people avoid apples, but if your child can eat them you should know that you can make your own pectin. I did this many years ago because I loved the fresh flavor of homemade jams, but hated how much sugar you had to use. What you do is boil down very green apples (you cut them but include the seeds, stems etc which are high in pectin.) You boil them until you get a thick mixture and then you strain it. I frozen mine in ice cube trays and when I made jam I would pop a few (depending on the fruit I was using and how much pectin was in the fruit) into the mixture. This allowed me to use much lower amounts of sugar when I made jams. I am wracking my brain trying to remember where I got the original recipe for doing this (it was a long time ago...pre-children) and if I do I'll post it. LL
