stiff egg white success!!!!!!!!!
I almost forgot to tell you the most exciting thing that happened to me today! I actually got my egg whites to reach the stiff stage! I was making divinity. I got the egg whites to turn out, but apparently I didn't get the sugar up to the soft ball stage-my thermometer *must* be wrong. I added the sugar to the egg whites and it remained the consistency of syrup. Then, I figured, what do I have to lose...so I put egg white and all back on the stove. Do not do this! It was like a volcano errupting. It would have been cool to watch, if I knew I wasn't the one who would have to clean up afterwards. I had to open the windows and prepare Jane for the possibility that the fire alarms may go off bc of all the smoke from mommy's baking. My burner pan is beyond recognition. Also, the divinity was no longer white, but sort of a nicely toasted marshmallowy color. Sort of made my kitchen smell like roasted marshmallows this evening when I was boiling the pasta. I am fearful I will begin to frighten Jane when I am in the kitchen. I already have her terrified of my grill skills. I once almost started the outside of our house on fire and literally ran to the pool for water to throw on the grill. Since then, I have had two close encounters with the fire department. Now she says, "Be careful, mommy. Get water." She was terrified from the initial incident and is very fearful everytime she sees me go for the aim-n-flame. I can't have her afraid of my kitchen skills, too. What can I do? Martha, where are you when I need you? Janelle
One of the things I learned from my mom who made great candies is how to check a thermometer. Put it in boiling water and when the reading has stabilized, the difference between the reading and the boiling point of water is how far off your thermometer is. This also works to make adjustments for altitutde. Joanne
