    I use stevia to taste (2 teeny spoonfuls using the spoon that came with it) instead of sugar in the Dari-Free ice cream recipe in Special Diets. I don't think anyone would ever know the difference. I'm using it in place of sugar for anything not baked. I haven't figured that part out yet. Melissa

    Has anyone figured out how to replace sugar with stevia in baked goods? I'm afraid if I just sweeten to taste, I'll lose something without the physical presence of the sugar. Does anyone know? Do I need to replace the bulk with more gfcf flour? Thanks. Melissa M.

    Melissa There are many comments on replacing sugar with stevia in the archives. You do need to replace bulk with something like flour/starch to make up the difference but it will take time playing with your recipe to see just how much you will need to replace. I'd be happy to help as much as I can. BL
