Spelt
is an ancient form of wheat, but modern wheat can have fifty times the gluten content, it has been bred to be high gluten. I know that Thursday Connor's teacher forgot and gave him two wheat thins, and the reaction was unmistakable. He became agressive, he bit his PT, he was hitting, crying and lost all impulse control. He is still distracted, tried to bite my mom today, but nothing like yesterday. Connor has been on the diet 16 months. Angela
Spelt is to be avoided on the GFCF diet. Alot of the recipes posted from "the blood group" list are not GFCF and have to be changed to be GFCF. I'm sure you could use 3/4 cup sorghum and 1/4 sup tapioca. Denise (LJs mom) * On Tue, 21 Aug 2001 19:55:42 -0700 "Heather" <boredtech2001@... I thought spelt was an ancient form of wheat and was not GF. Am I wrong? Were dealing with an allergy and possible intolerance (not sure which, because dd also breaks out in rash and hives along with diarrhea) so we cant have it anyway.
