Special Diets 2 Quickie Baking Mix ?
I got my Special Diets 2 book (cancelled the amazon order after another delay -- I got it from Miss Robens as I needed other things from them anyway). I'm very interested in the Quickie Baking Mix and related recipes -- my question is the mix called for Powdered Milk substitute -- there really isn't one I know of that we can use (cant have soy or Darifree). We use coconut milk or almond breeze for liquid milk. What could we use for powdered milk substitute??? Ground almonds? Any ideas would be appreciated. I love the book -- lots of good things I want to try making! Kelly

I have used both Darifree and dried soy, but have not done without. I have no idea if ground almonds would work. I would suggest trying a very small batch though, so you don't waste a lot of ingredients. I'm not sure. Sue? You out there? Any thoughts? LL
