sorghum pancake help needed

Hi I am trying to get a good non-rice, non-potato flour pancake recipe. I have made some decent bean flour pancakes and I am now trying to get a good alternate flour recipe. I tried the sorghum recipe from newdiets.com. It came okay except that I had to make some subs for the eggs (applesauce), replaced sugar with honey, and left out the milk powder. The taste was kind of bitter. Is there a special secret to sorghum flour to make it taste less bitter? I have cut in tapioca flour and then it comes real doughy or gooey. I will appreciate any little tips from you 'seasoned' folk! Thanks, Charlene
