Rice pasta question

Hello listmates, My daughter likes DeBoles rice pasta, but I have a problem. Whenever I make it, after it's done and mixed with sauce, I end up with a giant BALL of rice pasta, rather than strands. She so desperately wants to 'twirl' her pasta, but has to actualy 'cut' it. :0) Now, I by no means call myself a cook, but what can I do to stop the rice pasta from sticking together like this? Could I drop a few drops of olive oil on the pasta after it's done, then mix it up so it would stay in strands? Any advice would be appreciated and my daughter would be thankful that she could finally twirl her pasta like us. Thanks, Penny mom to Madigan, 3.10 (PDD-NOS) and Lucy, 2 (NT)

    Do you put oil in the water when you are cooking it? It sounds to me as if the pasta is cooked too long. I prefer my pasta al dente and with our rice vermicelli, only cook the noodles for about 5 minutes after I put them in boiling water.     Are you thoroughly rinsing the pasta after cooking it? Rice pasta gets much more sticky than wheat pasta - the only time I've had rice pasta turn into a big sticky ball is when I've forgotten to rinse it. Allison

    I've heard that Italians lift the pasta out of the pot and let it drip. This lets the strands get coated with water on the outside to keep them separated. .

    When we (my husband is the one who taught me) do rice pasta, we drain it, in a strainer and leave it sit over top of the pot which is kept on low with a small amount of water it. It makes kind of a steam table, which keeps the pasta warm as well as separate. If dinner is going to be longer than the noodles, we spread safe margarine on them so they don't stick while they wait for the sauce. ****************************** * v'col netivotcha shalom * ******************************
