Are there any french fries that are okay out there on the street? I think I heard that Burger King is okay but when I called up there the manager was not too bright...thanks....still struggling, Carrie

Hi. My son is on the GFCF diet and I have been trying to make home made french fries. I bought a good deep fryer and use Canola oil (the DR. said that is ok to use), but I cannot get them to come out and stay crispy. Does anyone have any suggestions? Thank you!!! Alison

I saw on a cooking show once. They said the secret to crispy homemade french fries was to fry them twice. Cook than drain them on a paper towel( he used a brown paper bag),let them cool, then fry them again. He also said you can dust them with a little flour before cooking.( I think rice flour will probably work.) I haven't tried this yet but I hope it works. Toni Peters Denham Springs, LA

I use red potatoes, slice them into thin wedges with the skin on, toss them in olive oil, and then roast in the oven on a baking sheet at about 400 degrees for about 20 minutes (or until crispy). My son is a picky eater (usually will only eat 'McDonald shaped' fries) likes these. The longer you roast them, the crispier they get. Also, if you soak them sliced potatoes in ice cold water for at least ten minutes before cooking (either roasting or frying) then a lot of the starch will be released in the water and the fries won't get those dark grey patches...
