? for Brenda Lee

Brenda Lee (or anyone else who may be able to answer) I would love to make the strufula recipe posted by someone earlier but we cannot do honey. Do you know how to use stevia to get a honey like consistency? What would be added to get it sticky? Any ideas welcome. Alicia

I haven't tried the liquid stevia but perhaps it would work - although I don't know how much you could use safely without making them so sweet your teeth would fall out in protest. I am wondering if stevia combined with vegetable glycerine in a syrup type base would work. Perhaps you could try this recipe for imitation maple syrup and leave out the maple. Yield: About 3/4 of a cup 3/4 cup filtered water 2 tablsepoons plus 2 teaspoons vegetable glycerine 2 teaspoons GFCF maple flavouring 1/8 teaspoon white stevia powder NB: Vegetable glycerine is derived from coconut oil and is primarily a thickener. You should be able to purchase it at most health food stores, and I think Ms. Roben's has it too - Jay? Don't use it though, if you have a problem with coconut. Combine all of the ingredients and mix well. Warm the mixture in a small pan before drizzling over pancakes, waffles or hot cereal. It is not very thick so while it might work, it will be more liquid than the honey. You could try boiling it down to a thicker consistency, but mine boiled about an hour and was still not "syrup" in the old fashioned sense.
