Explosion of Summer Squash - how to use

Hi all, We just grate the stuff in our food processor and freeze in ziplock bags. Use it in muffins, cookies (possibly?), and minestrone soup. I also make a wicked canned combo of tomato, zuchinni, onions and peppers with some salt. This is good mixed with tomato sauce over pasta, or dumped in the pressure cooker with leftovers to make soup in fifteen minutes. Carol

    Do you have a recipe you use? If not do you have approximate proportions? I don't have an explosion of zucchini yet but with 5 plants I probably will. Last year we planted 2 and didn't have enough so I decided I was not going to have too few zucchini this summer. Here is a funny zucchini story. Several years ago a writer from New York went to Moab (a town in southern utah that is an outdoors "mecca") to write a story. He stayed with the mayor and was suprised that the mayor never locked his car or house. The mayor told him he didn't need to lock because Moab was such a safe place. He went to church on Sunday with the mayor and the mayor locked his car. The writer asked the mayor why he was locking his car now and the mayor answered that if he didn't it would be full of zucchini when they got out of church. I doubt the story is true but it is still funny. Joanne
