Elimination diet cookie!

Here GOES guys....A cookie recipe on the elimination diet!!!!!!!!!!! 1/2 Cup Macadamia Nut and Cashew butter 1/2 Cup Fructose (Cane Sugar not on our diet) 1 1/2 tspn egg replacer 2 Tbspns Water 4 Tbspns GFCF Flour (Hagman mix) 1/4 cup Canola Oil Blend, roll into little balls, put on cookie sheet, do the fork criss cross flatten pattern SON LOVES THEM HOORAY FOR A SNACK BESIDES RAISINS!!!!!!!!!!!!!!!!!

    Anyone have a good GFCF christmas sugar cookie cut out recipe with frosting? we have nieces and nephews overnight this weekend and want to make christmas cookies. thanks in advance! K

    I've got one. It's a little tricky to work with if the temp of the dough isn't just right but my 1st graders classmates think I am the best Mom in the world. I made them for Halloween (ghosts). If you search the archives for Ethal's sugar cookies, that's the recipe I've used with some substitutions for things we can't have. (ie, sorghum for rice flour, arrow root for potato starch.) I also used a recipe for Royal icing from marthastewart.com (if you are looking for that really hard icing) It's after midnight.     Here it is Ethel's Sugar Cookies 3/4 cup GFCF margarine 1 cup granulated sugar 2 eggs 1/2 tsp. GF almond extract or 1 tsp. GF vanilla 2/12 cups GF flour blend (I use a mix of 1 cup sweet rice flour, 1 cup rice flour, 2/3 cup potato starch, and 1/3 cup tapioca starch) 1 1/2 tsp. xanthum gum 1 tsp. baking powder 1 tsp. salt Mix margarine, sugar, eggs, and flavoring thoroughly. Combine flour, baking powder, salt, and xanthum gum together; blend in. Chill at least 1 hour. Heat oven to 375 degrees. Roll dough 1/8 in. thick on lightly floured (rice flour) surface. Cut shapes with cooky cutter. Place on ungreased baking sheet. Bake for 6 to 8 minutes. Makes about 4 dozen cookies. You can either decorate these with GF sprinkles and bake that way or add icing after they've been baked and cooled.
