Crackers

I need a cracker recipe for my son's school snacks. He is having a yeast problem again, so we are back to eliminating sugar. I use to make a very low sugar-sugar cookie and cut it into cute shapes. I would like to do the same, but with a cracker recipe instead. He is also off corn, soy, peanuts (almonds, walnuts, brazil nuts OK) and of course, GFCF.     Patsy Have you ever thought of just having him of all simple and complex carbs for a time while you treat the yeast? We do that every once in a while and use low glycemic index vegetables like romaine and bok choy as "wraps" during the week or two that we are off carbs altogether.     I know it isn't easy Patsy when they refuse to eat. I had one who was quite picky but not to the point of refusing to eat anything if he couldn't have what he wanted. In Canada Dyflucan is $25 for one pill and so we haven't gone that way, even if we could convince our GP to prescribe it. In the fall I am going to work on getting him to prescribe some nystatin but our pharmacy will only get the kind that is banana flavoured and mixed with sugar, which kind of defeats the whole purpose. We are pretty much carb free at this time, except for fruits and veggies. When I do bake I use chana flour (east indian chickpea/lentil) which at least has the bean proteins to balance the carbs. If the doctor won't come onside, we are going to go with the Pau D'arco and try that for awhile. My son is nearly 12 though so that makes a difference in treatment options.     Sheryl WE use the chana in a blend but that is a taste preference only. I, personally don't care for the taste of bean flours, but my children like them a whole lot more than rice and sorghum makes them ill. However, when we do blend chana (and we don't always do that), chana is the major component of the blend.     Has anyone had success baking crackers? Jane tried the Bi-Aglut(sp) and was thrilled to have a cracker finally. I ordered them from Miss Roben's. Has anyone tried and liked the cracker recipe in Lisa's book? Is it worth the effort or should crackers be the one expensive treat to buy?
