corny butter

We can't do corn, but I came across this recipe and thought I would share for those of you who are lucky enough to be able to use it. Maybe a different flour could be substituted, I haven't tried this recipe. Corny butter 1/4 cup corn flour (finely ground corn meal available at hfs) 1 cup water 1/2 tsp salt 1 tbsp gelatin or agar agar plus water to soften Stir the cornflour, water, and salt together in the top of a double boiler. Cook slowly until thick. Then dissolve gelatin in cold water to soften it and heat the gelatin-water mixture briefly as you would for a gelatin salda or dessert. Add the gelatin liquid to the corn flour mixture and stir to combine. Refrigerate to set. "This positively melts on hot toast." If anyone can come up with a corn free version please post.
