corn is gluten free, but some have an allergy to corn as well as the gluten. I've also heard that European oats are ok, if the machinery is dedicated. In the US, they rotate crops, raising wheat one year and oats the next. On the oat years, they get volunteer wheat, and therefore cross contamination. Also if a company makes something that uses wheat, and then makes something gluten free, but uses the same machinery without sterilizing between, it's cross contaminated as well. David can have corn, rice and soy as of now, unless he develops an allergy for those.

Yes Kim, corn flour is okay to use on a gluten and dairy free diet. Some specialists refer to corn gluten, but what they really mean is corn protein.
I saw your earlier request and can only tell you to check an Asian store. Ours locally is run by a Phillipino couple and they have all sorts of gluten free/dairy free products like sweet rice flour, rice noodles, yam powder, and so on ....
Let me know if I can help somehow, even though I am in Canada. I have friends in Australia and New Zealand and they often talk about a member of the potato family that is similar to yam or sweet potato but is purple. That's a nice flour too.
Blessings,
BL

I guess like everything else we deal with, we have to read the labels very closely. Perhaps it's a certain cornflour?
