corn flour

Anybody know where you can get corn "flour" that is CFGF? Thanks, want to do a recipe from Carol Fenster's book Wheat-free Recipes and menus and this is called for in that recipe.

    I just recieved a cookbook that called for corn flour. Does anyone know if that is the same as masa which is used to make tamales? Th ank you so much. Leigh The cookbook is Cajun and Southern Gluten - Free Delights.

    Corn flour is the same as masa. Maseca brand is a wonderful one to use. They ONLY deal with corn so there is no contamination. Trisha Montez

    No--the corn flour used for tamales is called masa harina and it is put through a special lime wash. Regular corn flour is simply ground corn. Suzanne

    Wendy, I started using 50% garbanzo bean flour and 50% Fava bean flour to make a roux. I will warn you it smells weird when starting it, but it made the most perfect shrimp stew I ever had in my life! My kids wouldn't even try it because it had shrimp in it, but my DH and my bachelor brother raved about it for days. Wasn't gritty or odd tasting in the least. Please try this! Joan
