Coconut milk

I'm new here and not sure how to post to this list. I hope I'm doing this right. Any help would be appreciated! I am GF and CF. My 7 year old daughter is also. This is our first Thanksgiving to cook this way. I'm struggling with everything. I see many of you post that you use Coconut Milk. Is this the same coconut milk in cans from the grocery store? If not - how do you make it? Does it substitute for milk in cooking puddings and treats? Also, many of you have referred to the "archives". How do I get to these to search for recipes?     Jill, Welcome. This group has been a life saver to me! See the gray rectangle in the top right corner? It says SEARCH ARCHIVES. Type in the white rectangle next to it what you want to find. If you want to know about coconut milk, type coconut milk. But don't feel bad about asking. I think I asked 10-20 questions a day.     I don't know what others do. I don't know if the canned coconut is GFCF. We however make fresh coconut milk all the time. Here's what we do: Punch out the holes and drain the juice into a cup. Crack the coconut into pieces and get rid of the shell. A thin layer of brown is usually still on the coconut meat, so cut that off. Then put the meat into a blender and blend away. The shaved coconut lasts for a long time in the refridgerator. Leave 4 cups coconut in the blender and add 2 cups of water that just started to boil. Let it soak for 30 minutes. Then "Liquify" for 5 minutes. Strain through cheese cloth. Refridgerate - it will separate into a cream and milk. It will keep for 2 days in the refridgerator. However it will freeze well. Kris P.

    I use a brand which is organic made by a company called legend Organics. They are based in the UK but may ship to the U.S. They are based at Chipstead, Surrey, England CR5 3QQ. I am sure that somebody on the list will probably know a suitable brand nearer to home for you, but if not, you could always try contacting them as they are bound to have a web site. It has no preservatives and contains only coconut and water. Good luck. Lesley

    I use Thai Kitchen brand Pure Coconut Milk ingredients are just coconut milk. It also says "naturally processed without chemical additives or preservatives". I find it at my local health food store (Whole Foods plus a smaller regional chain called Mrs. Greens in the NY suburbs). Kelly

    What talent we have here! I enjoyed the poem. Listening to all this talk about making you all your own rice milk and coconut milk has made me think about how we practically have to go back to the stone age to take care of our kids.     Last year Thai Kitchen brand and the other brand sold at Wild Oats had a preservative. I am glad to know that Thai Kitchen no longer uses a preservative. Joanne

    Your note brought back some memories of my honeymoon, which made me chuckle. We went to the Dominican Republic and found a coconut tree, with a coconut ripe for picking. We were very proud of our find and spent the next 2 hrs trying to open it. We threw it off curbs edges, walls, tried a pen knife. My husband even climbed on top of a building and dropped it from great height, but to no avail. This coconut was just not going to give us its lovely juices, so we took it back to the hotel and one of the hotel staff saw us looking a bit miffed. He took it off us and opened it in about 10 seconds flat. There is just no justice. Lesley.
