Chocolate pudding?

I LOVE chocolate pudding! Has anyone got a good recipe for this anywhere? I just realized last week (after buying some) that I can't eat it without getting sick (lactose intolerance, I think). So I've been completely off milk for about a week now (been off milk for months, but I've had small amounts here and there throughout). But I want pudding! Thanks! -Janna

    I just take extra firm tofu and put it in a blender or food processor. I then turn on the machine and start blending. I add gfcf vanilla extract and then about 1/4 cup of cocoa and then i add enough honey to make it sweet. I might also add a tablespoon or two of water if the tofu blend is too thick. I then let it chill at least 1 or 2 hours. Some health food stores sell Mori-Nu pudding mix which is to be used with tofu. It sounds icky but it is really good. I promise! :) Erika

    Hi again, I just checked my Miss Robens catalog and it says that its soy free (for the chcoclate, butterscotch and banana) but that only the lemon has soy. So go get some!!!!!!     I just tried the Nu-Mori pudding mix that you blend with Tofu..it was awesome and it tasted like chocolate mousse. It stayed in the frig for 4 days. Regards, Marian

Around Passover time (spring) there are lots of pudding mixes available that are not only gf/cf but corn free as well. Keep it in mind for next year. I know lots of people who stock up for a year's worth. Imagine brand (prepared) puddings are good too. LL

    The ingredients list on the package are : Dehydrated raw cane juice, Sucanat, dehydrated honey, cocoa poswer, potato starch, guar gum, non hydrogenated coconut oil, soy lecithin , vanilla. Aren't these dairy/gluten free? Thanks, marian
