Gyros -- need recipe

Anybody know of a gyro meat recipe? I know it is usually beef and lamb but not sure of the rest or how I could slice it like we use to get at the restaurants. My daughter keeps asking for it and I can't get any one to confirm whether Gyro meat is GFCF. Any ideas??? Thanks in advance Lori

I made this from Lisa's book yesterday. It's on page 152-in my book at least. It is made from eggplant and reminds me of guacamole. I didn't have the tahini it calls for(actually I looked at that word and though tamarind and that went on my shopping list. All of these new words!)I still don't know what tahini is, but it doesn't matter. It was soooooo good. Try it if you haven't. I ate it with homeade tortilla chips that someone posted the idea for. Yes, I say "I" ate it as none of the others in my family got to try it. And I wonder why I am gaining weight on this "diet". Yikes, did I really eat an entire eggplant yesterday? In David's case we came up with the following: - strips of meat (chicken, turkey, ham, or beef) can be bagged to eat with fingers, used to top a salad, or added to other ingredients and wrapped in a corn tortilla or lettuce leaf. - chicken drumsticks, roasted, barbecued, with a lemon-honey glaze, ovenfried, etc. - raw veggies with hummus as a dip (hummus is ground chickpeas, and high in protein) - chicken salad, egg salad, or ham salad, on lettuce, or wrapped in lettuce leaf or corn tortilla, or wrap egg salad in a slice of ham or turkey lunchmeat. - peanut butter on rice crackers - skewers of cooked chicken, cherry tomatoes, broccoli, etc. - chicken or beef fried rice, in thermos - taco salad (pack the tortilla chips or slices in a bag, the veggies in a bag, and the taco meat in a thermos, and have the child dump them together in a disposable bowl) - fresh fruit, esp. melon slices (watermelon, honeydew, canteloupe) Fortunately, you can buy many gfcf chips, fruit rolls, etc. at your local grocery store. You can also send a bag of gfcf cereal, and a thermos of whichever milk sub you use. Or let them eat a dry cereal as a snack or chip (at least they have vitamins added.) Libby's Pancakes

Hi Janelle, This is not a direct answer to your question about a sorghum substitute, but I wanted to let you know that we use Hageman's bean flour mix in Libby's pancakes with great results. Our boys prefer the pancakes this way to the original recipe with the greater amount sorghum flour. Also, I believe that the recipe in the archives calls for 2 packages of chocolate chips. We use one 12 oz package of Ghirardelli semi-sweet chocolate chips, which I have been able to purchase at the Walmart superstore. These chips are casein free, but they do contain real vanilla and I have not checked to see if the vanilla is gluten free. It hasn't been a problem for us. By the way, I have thought so many times how thankful I am for the Libby's pancake recipe. It is wonderful to be able to make ahead a mix in large quantities that yields a product that tastes so great. Our boys love these pancakes and we use them as a substitute for cookies or even donuts. They kind of remind me of a chocolate croissant!! We have found that we like the pancakes best if I make the batter on the thin side so that the pancakes spread out into a rather flat circle on the griddle. And a slow cooking time works well. I use my two burner cast iron griddle. Libby's Pancakes gets our hands down favorite recipe vote for a very yummy gfcf(and egg-free, our other big limitation) treat!! Jolene

Only one was possibly acceptable on this diet, and that would depend on the ingredients in the protein powder one uses. Sorghum and juwar flours are the same, correct? I have that flour and want to make Libby's Chocolate Chip Pancakes(from archives). That is beside the point, my question is ... Sorghum is my most $ flour that I buy. Is there a replacement that works as well(cheaper)or is there a particular reason for using sorghum?(nutrition or texture?) This just came in one the frozen assets list. I'm definitely going to try it! I'm also going to try it with cooked rice. Maybe corn mush? :-) << Potato Breakfast Pizza 1 lb frozen hashbrowns 1 lb breakfast sausage - cooked & crumbled (you could use bacon or ham also) 6 eggs + a little milk beaten together Grated cheese Heat a little oil in a large skillet and put in hashbrowns. Let them start cooking about half way. Season with salt & pepper (I also add a little garlic salt). Press down into your skillet to form a "crust". Pour the beaten eggs over the potatoes and then quickly add your cooked meat. At this point you could add mushrooms or black olives or cooked onions if you like. Cover with grated cheese, turn heat down to low, and cover. Cook until eggs are set and cheese is melted. This pizza should slide out of your skillet onto a serving plate very easily. Let it cool and slice into individual slices. Wrap in plastic wrap and freeze. I think that I saw this on TV somewhere, but my family really likes it. It is pretty easy and you can change it up each time.

Ashley Hi, my name is Terry and my daughter is 11 weeks old. Basically I refused the Hep shot in the hospital and have made up my own immunization schedule for her. I followed some guidelines that were given at a DAN Conference. Today she received her Hib. She will not receive all Hib's and not all PVC's. Her Pedi is VERY nice and will work with me on practically everything I want to do. Though he has told me that he doesn't believe the immunizations is what caused my 5yo son to get PDD-NOS. But all the info that I have given him makes him comfortable enough to work with me. Her MMR WILL be in 3 separate shots leaving 1 year in between each. Basically a DAN doctor is a Defeat-Autism-Now doctor. I visited with 2 in my area and DISLIKED both of them. So I decided to talk with my son's Pedi and he was willing to do anything that could help Nik. I am one of the lucky ones. Dear Phyllis, Drink your lemonade, don't feel guilty, you are already doing super human things just dealing with that kind of behavior. I say this coming from a mom who did it for 12 years. You are way ahead of where I was at when my son was that age! Congratulations! I am about 5 months into this allergy thing so won't give you much advice on what to test for except test for corn and pray you don't have that one with your boys. It seems to be a common culprit for violence. Also you mentioned that one of your sons is worse now than he was a couple of weeks ago when you started the diet. That is great! That should mean that after he has his "withdrawal" period you should see great improvement. I know it seems hard to deal with right now but I am really glad I stuck it out with my son. Just be thankful that your kids are smaller and easier to control (somewhat anyway), if you had waited until they were older and larger you might find this period of time even more difficult and dangerous for you and them. And yes, I know this from experience. I know you are at your wits end. Believe me I have been there, too. I wish I was there to say leave for a couple of hours and get your sanity back. But since I can't do that, just know that you are already doing more and handling more than most moms ever have to on a daily basis. You have done a great job! You will do a great job of mothering them! And for now, you are taking a well deserved mental break. When I get where I can't take anymore I just pull back and do the bare minimum, make sure no one gets hurt. Easier, said than done most of the time, but make that your only worry right now and resort to TV, video games, anything you have that works to occupy them which by the sound of the boys may be pretty tough but I hope something works for a while. You will learn how to cook for them, I did and I am the world's worst cook!!! In the last few months, I have gone from burning frozen pizzas to creating some of my own recipes and actually making good tasting GF bread. It can be done but not in a day! My son's doc gave me a week to start his diet and that seemed impossible but I did it. I can hardly believe we ate that horrible stuff in the beginning and I spent a lot more money at the hfs at first. But hey, obviously I work well under pressure or I couldn't be his mother! I made a ton of mistakes at first like giving him non-GF rice milk and all kinds of stuff but all the learning has paid off with a boy that is actually fit to live in society these days! It is such a miracle and we are so thankful, I pray you get your miracle, too. If you have anyone family or friend wise to help you close by, I would highgly recommend you get someone to take the boys while you relax and research. This would have been great for me but not possible since my son was getting so hard to handle that only a professional could do it, and those have always been few and far between. I hope it is possible for you!!! Wish I was there to help you! RELAX and drink your lemonade! That is an order, LOL! Things will get better! And if they don't you will still make it because you love them. He has had seizures since age 4 and I've been trying to find out if anyone out there has had experience with their kids seizure activity being reduced or eliminated by the diet. Isn't GFCF cooking humbling when first starting out?... My daughter used to love pancakes until I tried 3 times to make them. We eat them, but they are heavy hamburger looking "pancakes"(I use that term loosely). I use the Don Baker's recipe in Lisa's book. I have tried it 3 times. The batter reminds me of Plaster of Paris even though I add much more liquid. My poor children are losing faith in me and getting tired of cream of rice every morning. I figure I have one more chance....how is the Karyn's Pancakes recipe above the Don recipe? I hate to keep experimenting when I have you all for a wonderful resource!!!!I keep telling myself that living in Houston with the incredible humidity is affecting the results. OT--Vaccinations plus atonement REC

Once they get that final 3 virus jab its really really an assult. Their bodies do not take it well at all, ending in an immune response hence leaky gut, and autistic symptoms. Dr Wakefield has researched this extensively and it has been such a fight to get this to be TRUTH to the public. There have been biopsies done on autistic childrens intestinal mucusa and have found the measles virus as the culprit to the leaky gut. Thank God not all children are affected, but something is predispositioning our kids and something isnt right here with the numbers so out of control. Anyone who feels their child was developing normally before their symptoms hit or dont feel its a genetic factor, I recommend if you havent already look more into the biological treatments with a DAN doctor. My son has done some testing, one test indicating leaky gut, stool tests indicating malabsorbtion, urine organic acids indicating some metabolic problems common in these situations. The diet has been great and is so obviously the best thing I ever did for him. So I know he had issues with leaky gut. And he was fine up until he was 13 mos old got that MMR and I noticed the change and loss of communication and most of all eye contact. No one can convince me that my son wasnt vaccine injured, I know he was. Tiffany

Mixing GFCF with non GFCF

I think of a million questions at night to ask you all! Anyway, for the past several evenings my 1 yo NT son has been having horrible, screaming gas pains after being asleep for a few hours. He has been gfcf(for 5 weeks) with the rest of the family. However, I let him eat non GFCF foods occasionally. For example, during Jane's nap one day, he ate his Daddy's non gfcf sandwich(which he forgot to take to work-SIGH)for lunch. When my son goes to Mother's Day Out in a few weeks, I am sure he will get snacks such as Goldfish etc. that are non GFCF. I hadn't planned on enforcing the diet while he is "out and about". SO.....my question is....Do you think mixing GFCF and non GFCF could be causing the colic-like screaming, painful episodes? The only other thing I can think of is that we have been experimenting with different rice milks and possibly that bothers him. Then, of course there is the fact that I am not the greatest cook. Has anyone had trouble with their child reacting to any ingred. in Kirkman's DMG? We believe this is what had been causing Jane the stomach pains. I called and asked and Kirkman's said it could be a reaction to the raspberry flavoring. She also said the capsules didn't have this. Anyway, we stopped the DMG and I will reintroduce it in a few days. I think someone said it is out of your system within 24 hours or so. Again, I feel I am using my daughter as guinea pig. I have a question regarding a product; wanted to know if anyone has checked, and verified if it is gfcf and okay: Hershey's Sundae Syrup (double chocolate). Ingredients listed and suspects, are: modified food starch (anyone knows if it is from corn or wheat?); vanillin, an artificial flavoring (is this vanillin ok?); mono and diglycerides (are derived from....?); potassium sorbate (forgot if it is ok on the diet). Also, is "cocoa processed with alkali ok"? If this is not ok, what other ice cream chocolate syrup can my son use? Ok, my sister-in-law used clomid for three years until she got pregnant with her second son, and she has an NT child, who is 3. She is now pregnant with her third child and she still used clomid. She says she hasn't had a problem at all. Maybe this child she is awaiting for will be NT as well. Maybe clomid is just "reacting" for those who has already a predisposition for autism. I didn't want to push her to question more, as she doesn't need to be worry now that she just got pregnant. * I just made this for the first time and it was very good so I am reposting it. Andrea S. originally sent it in and it is so easy to make. I only used 3 pieces of white meat so I cut the recipe down in 1/2 from what is listed here, but here is her original recipe for making a whole cut up chicken. I made it with rice, and now the leftover rice and leftover sauce from this I am putting into a meatloaf tomorrow. I don't have an electris skillet like she wrote so I just put it in a saucepan on the stovetop for 2 hours. Denise on Long Island New York * Pepsi Chicken 1 12oz can of Pepsi 16 oz. bottle of GFCF BBQ sauce 1 cup brown sugar 1 chicken, cut up Combine Pepsi, BBQ sauce, and brown sugar. Put into an electric skillet with the chicken pieces and cook over medium to med. low heat for 2-3 hours. You could probably cook this all day on low in a crock pot.

Hi all, I am about to have a children's Birthday Party, and need some suggestions. I know the subject have been discussed a zillion times, but bare with me if I ask again. #1 What candies can I buy in regular grocery stores, that are gfcf (and with the minimum amount of dies as possible)? that includes chewing gums, lollipops and such? I am trying to have pignattas done, but I need the right stuff, so my son won't get into the forbidden foods. #2 I need a foolproof recipe for a bread-type focaccia or something like that, that I can cut up into pieces and use as bread, for the "buffet". Good if done with sorghum and/or rice flour (yeast not a problem). There will be adults, so I am having a pork roast and a chicken, with potato salad and raw veggies or fruits plate. What kind of dipping do you suggest? of course gfcf but for little kids (age ranges from 2 to 5 yo). So nothing spicy, you know? #3 CAKE: I was thinking of a nice fruit tart. I use to make excellent tarts before gfcf; now it is all different, so I would like a nice crust tart recipe (the sweet ones with eggs, sugar and butter-of course, I will sub for the butter). Or maybe a cake that I can make thin and in one layer so I can use as a tart base. How about the icing things that are used to write on cakes: are there any gfcf ones or a recipe to make some so I can write on the cake? how about sugar sparkles? are there any that are ok, and of fast access? I have no time to order online and need to find things in regular stores, so I don't have to drive too far, and can concentrate on the guests arrival from Italy (YAY!!) For those who can use soy, I found this recipe in my new Vita Mix cookbook. It should be easy to use in any blender. From Vita-Mix Recipes for Better Living Qick Soy Milk 12.3 ouce block lite tofu 1 quart water yield 5 1/2 cups (1.32 ltr.) Blend on high until smooth. if desired, flavor the soy milk with up to 1 tablespoon brown sugar. and up to 1 tablespoon vanilla. This soy milk separates when refrigerated. Stir before serving. I made my first batch today and it used honey to sweeten it.

I just got my new Vita Mix recently and have not even used the 'wet' container one yet but have been busy re-grinding up all my flours that I had ground with my very old Vita Mix. Instead of using the old one for a trade-in I have decided to give it to my daughter. I got a 4 1/2 quart Kitchen Aid for Christmas at my request from DH. Check out Vita Mix at their web site www.vitamix.com I did a web search on the Kitchen Aid for price and bought one from Amazon.com Then I found I could of bought it at the same price from our local Wal-Mart. I definitely think both are the best brands. I bought the Vita Mix that comes with two containers. One for wet ingredients and one for dry. It was just a bit more money and I think worth it. My old Vita Mix had a spout to use for drinks and soups and grain always gets caught in it. It was a lot of extra work keeping that out of my flour. Now no spouts and twice the horse power get the flour ready in a lot less time. You can buy one of their reconditioned ones for a little less money. I do not have a clue why I decided not to but kicked myself later for not doing it. These are just the ones that they use in demonstrations at fairs and cooking shows not some that have been traded in. When Evan first started the diet, he started tasting the cat food. I checked it out and it did not have any gluten or casein in it. While his brothers are ALWAYS grabbing a handful, Evan never did so it was a concern that he might be picking up a new habit. Well, it was just a couple of pieces in the first few days of his diet and he left it alone again. Apparently it does not appeal to his taste buds like it does his brothers. What we use has a corn base. I know the pet food is suppose to be fit for human consumption but I really would like to know what the other two boys see in dry cat food. they will sneak it into their room to eat or grab a handful and run out the back door to play. Glenda, I can't help you with the appliances. I have neither. My mixer is a very old one my grandmother got when she was married 30 years. Still works wonderfully for me. I want to get an electric grain mill but it isn't a priority right now. Bonus on the HFS deal. My local store is so small and cramped that not even the owner knows what all she has in there - grin. Good luck with planning a menu and buying in bulk. Sounds like a plan, but unfortunately homeschooling takes too much time for me to work it like that in this house. I am amazed at how Jane is craving the foods that bother her! This morning I gave her a frozen juice bar-one from the gfcfdiet.com list and within 20 min. she was screaming, hitting, running around the room. That was the only thing she ate, so that had to be the citrus in it. She keeps demanding fruit bars. Then I walked around the corner and she was eating fist fulls of the dog's food. She moved her wagon in order to reach the bin it is stored in. She screamed and tried biting me when I went to get it out of her little fingers.Wow! Talk about an addiction. I also got her several boxes of bi-aglut crackers and now she doesn't like them. SIGH. Maybe in a few weeks when the memory of goldfish is no longer... I'm not the one who bought the appliances, although I wish...I am ready to get a little deepfreeze, though. I just bought 12 bags of tapioca starch at the store today. Hmmm, where to store them? Tomorrow I will go to the Indian store for Jowar/Sorghum Flour. I thought they were the same! Thanks. Is Agar Powder the same as Agar Agar? As far as "recovery" goes, in the few weeks we have been on the diet, I have seen amazing improvements. However, just today I was feeling down bc I guess I was expecting the improvements to keep on going until she was "normal". I am still accepting, I guess. ps I made several rice milks today. Our DAN doc says to stay away!! I think if it's in fresh, it will be in canned, don't know how they would remove it. Amy What are the feelings regarding canned Tuna? I always thought the mercury factor was related to fresh Tuna and Swordfish. I am planning on asking my DAN! Thanks I can't answer about Clomid or other fertility drugs because I haven't seen too much research in that area, but I wanted to ask you if your children had received early vaccinations. It is possible for someone to have an existing disposition to something and then have it triggered by trauma of one kind or another. Vaccine damage relates to many children with autism who were fine before shots. With the government instituting programs for more and more vaccines earlier and earlier I am of the opinion that more children are being brain damaged from birth. My second(and last!) child was not a clomid conception and so far so good-he's only 13 mos. My husband and I were thinking last night about trying Jane back on milk. After all, we just jumped head first into this five weeks ago and went cold turkey gfcf and have had only the skin prick(or whatever they are called)tests and she only reacted to peanuts. Then I read a little about the gut thing and thought, is it worth it to try her back on dairy products? But we really don't know which one bothers her(GFCF?). Since dairy leaves your system quickly....Has anyone tried to reintroduce dairy? Are any of you just gf? Janelle

I have a question..../ broken mercury thermometer

Until I read this I had forgotten that one of my older children had broken 2-3 mercury thermometers at the doctor's office by letting it fall from their mouth. I remember that my son was playing with the mercury on the floor! No one even thought a thing about it. I certainly did not know about mercury poisoning and apparently neither did the nurse. I can't even remember now if the doctor even knew it happened. My son suffers from depression but it runs in our family. My oldest daughter doesn't seem to have any problems except for being a workaholic. That was over 35 years ago and now I cannot remember if just the boy or both of them was down on the floor chasing the mercury around. crazy to remember this and wonder if that had any thing to do with his behavior growing up and now. I just woke up in the middle of the night and noticed a light on in the kitchen. I wondered where the light was coming from and went to check. It was the light in the microwave and smoke was pouring out of it. David had got up, told his mom he was hungry. She told him to go back to bed and fell back to sleep. He put a pizza pocket into the microwave. It was still set to go another 69 minutes and was all ready burnt to a black crisp. They cook in 2 minutes so I do not know how long it had been on. He had Unisom and he still got up at 2 am! And he is not the one with autism. I have been waiting for months for Mental Health to get him evaluated! His therapist does not think he is bipolar and he is unsure that he is RAD. I wish he lived with him and maybe he would hurry the evaluation but he does not even want to work with him as a therapist because of the boy's behavior! Sorry I know that this is off topic, but some people get long winded when they get up at 2 am with a house full of smoke! Glenda Sometimes it takes things like this weekend to prove to us what a difference the regime is making in our lives and the lives of those we love. It is expensive but as time goes on, you will find more and more ways to economize as well. If you don't have corn issues, you may be able to use cheaper corn flours in place of some of the more expensive ones, as well as finding generic brands of things like rice noodles locally. Until this year, we didn't even consider bread because it seemed a waste and while the children and dh loved having the buckwheat and chana bread on Tues, they are happy too to go back to eating tacos and waffles instead of "bread". BTW, use romaine lettuce as a wrap for tuna. It makes a great lunch treat. My son used to take it to school and the other children made fun of him until his teacher pointed out to them that Alex was eating way healthier than they were - grin! My children even ask to have salad and other healthy choices that parents all around me are wishing their children would ask for. As time wears on, (it's been 5 years plus for us) you will find you spend less. I use the crockpot alot and make lots of soups and stews in the winter and that saves lots of money as well. Hi All, I am only 2 weeks into my son's PDD diagnosis and I'm doing lots of research. Today's posted topics made me really think about think the possible reason for Autism. Do you all feel that Autism was caused entirely by environmental reasons and not genetics? I am having my son evaluated this fall and I am filling out a mountain of paperwork. LOTS OF QUESTIONS!!! I got to the family history page and I was really taken back by my (and my hubby's) family history. I have had OCD, depression, and anxiety since I was a tot. My Mother had OCD, depression, bi polar, addictions to alcohol and prescription drugs AND is currently suffering from dementia. According to my father, my mother's sister "was not right" and died as a young woman. My hubby is ADHD, and was speech delayed / L. D. as a child. My hubby's brother was OCD and his mother and 2 sisters all suffer from depression. After hearing my son's diagnosis, my father told me that he has always been worried about me having children. OMG!!!! Just fix me now!!!!!!! LOL I don't mean to go on and on but I have noticed that many families have multiple children with psych issues and spectrum disorders. There is a group of researchers who consider ADHD part of the autistic spectrum of disorders. The GFCF diet works well for many ADHD children as well. Of course, many ADHD children are actually misdiagnosed Cerebral Allergy Responses anyway. Our former ped even agreed that while the eldest was indeed diagnosed ADHD, he did have many autistic-like behaviours. Cynthia, actually this sounds completely familiar. I belong to a RAD list also and that is normal procedure for RAD children that like to roam, destroy and basically make life miserable for their parents after everyone is asleep. We have not done it to our boys because they do not do dangerous things when they sneak out of bed after everyone else is asleep. But our house does have locks on the outside doors that none of them can unlock without a key. That is to keep Evan from taking off down the road by himself and his two RAD brothers from sneaking out and getting into trouble. It is a pain to have to get a key to unlock the door everytime we want to go outside but it does give us peace of mind. Betty

dear listmates - I may be all wrong here, but I thought the name of this list is GFCFrecipes. There are many other lists about autism for other topics not related to the diet. I get the posts in digest form and it is very difficult and time consuming to scoll through numerous OT posts that have absolutely NOTHING to do with the GFCF diet or recipes. The posts asking questions about products, GF/CF status, how to properly make Noah's bread etc, get lost. I hope I'm not stepping on the moderator's toes, but I as a member would really appreciate it if the posts stayed on-topic! BTW, I made snack bars that aren't that different from Quaker Chewy bars yesterday, I used the basic marshmellow/rice krispy recipe and added peanut butter. Instead of rice krispies I used puffed millet and raisins. 1/4 cup margerine 4 cups marshmellows 1/2 cup peanut butter 3 1/2 cups puffed cereal (I used millet, corn or rice could also be used or a combination) 1/2 cup dried fruit (raisins,chopped apricots, currants, etc) Melt the margerine and marshmellows in the microwave on medium power, Stir in the peanut butter until smooth. Hi, I usually just lurk but I thought those of you with non-sleeping kids might like to hear our experience. Our son has been GFCF for about a year now, and just started enzymes last week. While we noticed a while ago that oranges are definitely a no-no for him, it was hard to know if a little would hurt. It seems that with oranges, he needs to have over a certain amount before the reaction starts. Well, we were mixing his enzymes with orange juice (stupid me) and he had real problems sleeping through the night. We stopped giving him orange juice and within 2 days he was sleeping all night again. I plan on exploring the PST issue further. (BTW - yes, he continues to receive enzymes but in lemonade instead) I know that this won't help everyone but thought I'd let you know our experience. Sorry to respond to this thread so late. I get the digest and try to limit my computer time to once a day (too busy working with the kids :o)) Cheers, Susan in Canada :o)

Well, I'm not sure what happened to my reply message- it didn't show up correctly. Anyway, all I said was we had to do the lock reverse thing too. When my AS daughter was 2 1/2 she wouldn't stay in bed. The pediatrician told us to just keep putting her back in bed- she would give up. HA!! That night she came out of her room 57 times!!! We counted! Anyway, after #57 we wisely decided to reverse the lock before we hurt her or ourselves- we were pretty much at the end of our rope. She was mad as a hornet, for about 1/2 an hour. Then all quiet and she went to ged. The next night she yelled for about 10 minutes, then quiet. The third, a token whine. She discovered that you can't engage with a locked door, you can't argue with it, persistence doesn't pay off. From then on, she'd just quietly check that it was in fact locked a few times after we put her to bed- every night for the next year!! These kids are like elephants- they never forget! Now she's almost 6 and we haven't had to do that for a couple of years. But, we still do it for our 4 1/2 yr. old autistic little guy. He'd be quietly up and gone before we would know it. Everybody sleeps, bedtime is not a battle. It works for us. We have plenty of friends for whom the family bed concept works great. I have no issue with that, more power to them. In our case, our kids would never settle down, and kicked us all night, and nobody slept. So, it just didn't work. Try the Dr. Phil test- "does this work for me?". Don't worry about everybody else. Every family works in it's own way that doesn't mean that somebody is wrong and somebody is right.

Thanks for all the wonderful info on yeast, corn.I will look at kirkman's today. I slept with Jane last night(no I am not involved in the sleep topic-teehee)so that I could rub her tummy all night."Tummy hurt" was all I heard. She woke and wanted to eat and I had no idea what to give her. I think sometimes she is hungry. I am giving her no fruits bc we think she reacts to the phenols.I know some fruits are ok, just haven't had time to check it all out. I spend my days taking care of the kids and research as much as I can while/ if they nap. The kids are 33 mos and 13 mos and can not be left to play indep. due to the aggression in Jane and her inability to play indep for more than a few min. I just feel so overwhelmed. I haven't had time to look into corn subs, I am with Jane 24/7 and how do you all find the time to do this when you are starting out!? My parents live in another state and are in a panic that we are starving Jane. I guess I feel so alone in this and wonder if this is right. Yes, I have a supportive,fully believes in the diet dh(does that mean dear husband? I don't know if that applies alllll of the time, but...)When he gets home, we each take a child. I guess a DAN dr. would really be helpful,but too $$$ right now. I do have a nutritionist through ECI coming. I requested one that knows about gfcf/autism. We'll see....How long before I figure out all of her allergies and can feed her. BTW, she has serious SI issues and only likes "CRUNCHY". I am desperate to find a replacement for potato chips. It concerns me that we should not include the preface, "in my opinion", because it is personal experience which has led to the development of this diet and to the research parents are now insisting on. So did I when I went shopping - I had better tell the mum who told me that it is gf. I had a shock today when I checked the ingredients of our soy milk more carefully - malt extract is the second ingredient! One of their brands they state malt extract (from corn) but the others don't specify the source. It took me twenty minutes to read all the other labels until I found a gf one. Marita

Hi- This isn't a recipe, but it is a GFCF topic... Wanted to see if anyone else has ever heard of this kind of scenario. Please excuse the length, but I wanted to give a little background. My 9-year-old son Nicko has been mostly GFCF for about 4 years, and TOTALLY GFCF for about 16 months (except for a couple of slip-ups). He seemed to experience withdrawal when he went totally GFCF, but we were also doing an elimination diet at the time. We've never been sure if the diet was helping him or not; we haven't seen any obvious reaction to slipups. One thing we did see was that, when he went totally GFCF, severe constipation started that has been plaguing him most of the time since then. (With occasional impaction evidenced by x-ray). All of the recommended dietary changes and mineral oil, laxatives, etc. have only provided occasional temporary relief. I actually have a kid who will beg me for enemas sometime (not to be too gross, but it's an indicator!). We decided to see what would happen if we reintroduced gluten into his diet, without changing anything else. So, last week we did. And.... he's been having much more regular, soft bowel movements without pain and straining ever since. This is the first time in over a year that he's produced a significant quantity of stool on a daily (or more than daily) basis. On the flip side, we've seen a little bit more "hyper" behavior. Most of his behavior has been within his (admittedly wide) normal range. I don't know what to do! I'm nervous about "poisoning" my son with gluten, but I'm so relieved to see him more comfortable and not all backed up. Any thoughts? Thanks-- Jane from Madison, WI

We have discovered a definite corn allergy with Jane(2 1/2 pdd). I am just getting over the overwhelmed feeling from the first few wks on the diet and the thought of avoiding corn is frightening. I printed out a list of items that contained corn someone had posted, but if anyone has this corn problem, would you tell me what to sub for the following(I will eventually get it all researched, but am desperate to make her some goodies that won't bother her)Also, will our kids outgrow any of these allergies? Which oil to use? Is fleishman's margarine still ok? what baking powder? Is vance's dari free ok? are potato chips out? she loves them and lives on them. I am also feeling a bit concerned about all of the new symptoms she is having(hives, tummy aches, almost constant fingers or entire hand in mouth). I am trying to keep in mind that this is common for there to be hidden allergies that emerge. I started the Dr. Sears tummy rubbing thing(she loves that), she refuses bubble drinks(club soda or ASeltzer), she didn't have a BM today(very unusual). I guess I am feeling I might be doing her some harm. Anyone who has ever felt this way, give me a boost! I truly believe in this diet, but it's just so scarey "going it alone". Now that we are on the subject of rashes, my son has had a bumpy rash on his upper arms for over a year. My regular ped said to put on some cortisone cream,and my nutritionist said it was probably due to a fatty acid deficiency. So he had been on EFA's for three months now and no improvement. Any ideas? They are small bumps, some are skin colored, some are red.

Carol, If Janelle's "rash" is yeast, buy some antifungal cream and apply it. If the "rash" goes away it is yeast. If a steroid helps, the rash isn't yeast. Steroids encourage yeast to grow rapidly. Parks's "eczema" was food related - legumes and gluten. You may also want to read the book The Yeast Connection. In addition to getting rid of the yeast, you might want to keep it away. The Yeast Connection gives a diet, low in simple carbohydrates and sugar/starchy foods; such as apples, grapes, juices, carrots, sugar/sweeteners, cookies/sweets, corn, white rice, potatoes... Taking a herb or fungicide is great to get rid of the yeast temporarily, but if one is prone to getting intestinal yeast, a diet change may be the way to go. The men continued to stand between parked cars, I guess to wait for someone else to hit on. I stopped a lady going toward them, pointed at them, and told her about how I was sent an e-mail at work about someone walking up to you at the malls or in parking lots, and asking you to SNIFF PERFUME that they are selling at a cheap price. THIS IS NOT PERFUME - IT IS ETHER! When you sniff it, you'll pass out. And they'll take your wallet, your valuables, and heaven knows what else. I tried Marci's soft bread from Lisa's book for the first time today and loved them! I was laughing when I was making them bc it sure didn't look like it would amount to anything... My 2 1/2 pdd daughter stopped screaming after her 18 hr. marathon. She's scheduled for an MRI end Sept. and meanwhile we are wondering what seizures can look like. We suspect seizures and/or panic attacks. Does anyone have this problem? Her eczema(don't you love how we all spell it differently?)flared up this morning after eating a corn muffin. I have been suspecting a corn allergy/intolerance, but didn't want to give that up with the soy at the same time. So, I suspect it was from the corn? Currently she uses nystatin/cortisone compound cream (prescription) for her genital area. I have been suspecting yeast problems, but don't know much about it. I know you only have to treat it for a short time. That was very interesting to hear about the yeast-eczema connection. Can I put the nystatin/cortisone on other parts of her body-I know long term is a no-no. Where is a good place to find info on yeast /antifungul treatment? Janelle

I made a few changes in this recipe from an old Better Homes and Garden Cookbook Butterscotch Cookie Bars 1/2 cup margarine (I used Nucoa) 2 cups brown sugar 2 eggs 1 teaspoon vanilla 2 cups sifted gfcf flour 2 teaspoons baking powder 1/4 teaspoon salt The recipes calls for 1 cup shredded coconut 1 cup chopped walnuts I replaced them with 1/2 cup sesame seeds 1/2 cup raw sunflower seeds 1 cup raw pumpkin seeds The recipe calls for combining butter and brown sugar in a saucepan and cooking it over low heat until bubbly, stirring constantly. Cool. Add eggs to cooled mixture, one at a time, beating well after each; add vanilla. I have always just mixed the butter, brown sugar, eggs and then vanilla in my mixer and beat well, skipping the cooking procedure. Sift together dry ingredients; add with coconuts and nuts to brown sugar mixture; mix thoroughly. Spread in greased 15 1/2 x 10 1/2 inch pan. Bake in a moderate oven (350 degrees) about 25-35 minutes. Cut in bars while warm. Remove from pan when almost cool. Makes 3 dozen. These were suppose to be for Evan but the rest of us cannot keep our hands off them. I was thinking of substituting 1 cup molasses or honey for the brown sugar. Does any of you cookies bakers out there think that would work?

Seal-a-Meal : good or bad?

My question is - I hear so much about not micro waving in plastic cause the toxic whatever from the plastic gets into your food. Debbie Chana is an East Indian flour made from a pulse (related to legumes but not one) that is similar to chickpeas and lentils. It is a yellow flour and tastes like most other bean flours but seems to be tolerate by those who cannot have legumes. I find it at the local Safeway, but then we have a large East Indian/Punjabi population in town and the Safeway caters to that with an Indian cooking section. I believe they also have it at the Real Canadian Warehouse Store (kind of like Costco) but I don't suppose either of those will help you. Sorry, still can't move in. Dad can cook GFCF for sure, but he just doesn't know how to have meals on time, and as you probably know, children DEMAND meals on time - grin. Hi all, I just ordered melatonin from Kirkman's after debating long enough. I decided I should give it a try after I've heard so many positive opinions on it. Anyway, my questions are the followings: 1) will this make him sleep all night, regardless of PST (Working on it), or is it just a help for falling asleep? (he falls asleep alright, just will wake up and stay awake a while) 2) can it help also my NT 2 yr old (to be in 9 days) that wakes up tons of times in one night and always wants into our bed? (I think he takes it as a habit now!) 1 capsule of Kirkman contains 1 mg; It says 1 capsule for small children. 3)So, what dosage exactly for a 4.7 yr (40lb)? 4) and for a 2 yr (about 25lb, I think)? -For both, at least the dosage to begin with, if you know what I mean-. Please don't feel that you have done anything wrong. I am certain that you are not a mommy dearest, at all! If you are dealing with chronic ezcema, you may want to consider applying a safe lubricant/moisturizer. I am not sure about the gluten free/casien free status of Aquaphor lotion at the present moment, but we used it for our son's severe ezcema about 5 years ago. It is availalbe by special request by most pharmacy, and it is an over the counter item. Epson salt burns because it is contains salt, sort of like when you get salt in an open mouth wound. Food allergies can definetly trigger ezcema, too. In our son's case, it was corn that was our biggest culprit for trigger very very severe ezcema. Hang in there, and don't be so hard on yourself. Yes, in such things as Barbaras instant potatoes for example - has mono diglycerides , well the company replied to me saying that was a soy, so any product with diglycerides you should check. I call all manufacturesers anyway, even if it doesn't look like I need to question , I still call. Vegetable oils sometimes (actually most of the times) are a soy oil. I use Vances Dari-free for all drinking, cooking, baking, even mashed potatoes. It comes to about $1.66 a quart. I know before the diet I could get a 1/2 gallon of milk for that but................. We use it for drinking, baking, in mashed potatoes, etc. I am in New York and get my deliveries from her in 2 days. For every $45 you spend you get a free mix. You can also call them at 1-800-891-0083 and ask them for a catalog - they carry pastas, cereals, ready made snacks and cookies, also mixes, vitamins, condiments, etc. and every item in the catalog is clearly labeled if it is GF, CF, peanut free, egg free, soy free, corn free, etc. If you are too afr away till you get a delivery let him drink juice or water, etc. Some supermarkets carry Pacific rice milk which is GFCF. I was pretty upset and didn't give enough info. I really, really appreciate the help. I don't have a DAN dr. yet, as they are sooo $$, but am beginning to think it would be worth it. I don't feel the ER ppl or pedi. would be helpful. I should say we took Jane to the ER for "pitching a non-stop fit" a month ago and it was a joke. They did nothing and we came to the conclusion she might have panic attacks. To the person who said they used GABA(?) and had the same problem, tell me more, please. I just ordered calcium from Kirkman's and maybe should call and see if they can add GABA. Sometimes I feel " what am I doing to my child? She won't eat anything but potato chips and screams and I can't help her!"
